Three Bean Chili

This quick and easy, spicy three bean chili is perfect when you want a cozy warm vegetarian meal. Spicy three bean chili is healthy, hearty and just perfect for lunch, dinner or quick snack.

Fall is here and it’s in full swing! I love the weather in fall. The crisp air, leaves changing its color and falling down. Everything is so beautiful. This mild weather calls for something warm and comforting like a soup or stew.
I made three beans vegetarian chili and got store bought corn bread. Chili is a stew, in which almost everything goes.
 
I make my chili with black beans, kidney beans, and cannellini beans along with Spanish onion, garlic, red peppers, carrots and @tuttorossotomatoes crushed tomatoes instead. These tomatoes are sweet and tangy yet perfectly balanced flavors! This chili has very prominent flavor of roasted cumin powder and chili seasoning. It also has some honey to cut the underlying sourness of salsa, but you wouldn’t taste it. I topped it with a dollop of sour cream, cheddar cheese, some scallions, and chopped coriander leaves. Ohh yes, and of course some corn bread to accompany. What a satisfying lunch!

Ingredients you will need

In this recipe, you will need Spanish onion, garlic, red bell pepper, carrot, tomatoes, and three type of beans. Also, you will need roasted cumin powder, salt, freshly ground pepper, cayenne pepper, chili seasoning, chipotle chili in adobo sauce to create a delicious, warm and healthy lunch or dinner.

Beans

This Chili Recipe calls for a mix of kidney beans, black beans and cannelloni beans. You can use your preferred combination of beans or whatever you have on hand.

Aromatics

You will need Spanish onion, garlic and jalapenos(optional for heat).

Spices

This vegetarian three bean chili is loaded with spices. Roasted cumin powder, chili seasoning, cayenne pepper, freshly ground black pepper, chipotle chili in adobo sauce is perfect to give the flavor to this chili. Feel free to adjust the amounts of spices to suit your taste.

Tomatoes

I use canned crushed tomatoes. Use a good quality tomatoes. You can also use salsa as well instead.

Liquids

Use Vegetable stock/broth for the much needed flavors. If you don’t have it on hand you can use water.

Garnish.

I like to use dollop of sour cream, shredded cheddar cheese, chopped scallions, avocado slices and chopped coriander leaves.

How to make three bean chili

Saute

In Dutch oven or large pot, heat olive oil on medium heat. Saute onion, garlic, jalapeno. cook for minute. Add chopped bell pepper, carrots. Cook until they are soft. This will take about 5-7 minutes.

Simmer

Add the tomatoes, vegetable stock. Add chipotle chili, adobo sauce, oregano, chili seasoning, salt and cayenne pepper. Simmer, partially covered, stirring from time to time, for 10-15 minutes. Stir in beans and cook, partially covered for 20 minutes longer. Taste the flavor. Adjust the seasoning and salt.

Now serve, garnish and enjoy!

I like to serve chili with a dollop of sour cream, cheddar cheese, scallions, chopped coriander leaves, jalapeno slices, avocado slices and squeeze of lime.

I like to pair this delicious chili with cornbread or jalapeno cornbread muffins. Its the perfect combination of spicy chili with sweet cornbread and that takes the chili over the top, making it s perfect meal! Enjoy!!

Ingredients
  

  • 15.5 oz canned Black Beans drained and rinsed
  • 15.5 oz canned Red Kidney Beans drained and rinsed
  • 15.5 oz canned Cannelloni Beans drained and rinsed
  • 28 oz Crushed Tomatoes canned (can substitute with medium salsa)
  • 2 cup Vegetable Stock
  • 1 tbsp Olive Oil extra virgin
  • 1 cup Spanish Onion diced
  • 3 cloves Garlic thinly sliced
  • 1 Jalapeno chopped
  • 1 cup Red Bell Pepper diced
  • ½ cup Carrots diced
  • 2 tsp Roasted Cumin ground
  • 1 Chipotle Chili in adobo sauce seeded and minced
  • 2 tbsp Adobo sauce
  • ½ tsp Oregano
  • 2 tbsp Chili seasoning
  • 2 tbsp Cayenne Pepper
  • 1 tbsp Honey
  • Salt to taste
  • Black Pepper freshly ground
  • Sour Cream for garnish
  • Cheddar Cheese, shredded for garnish
  • Scallions, chopped for garnish
  • Coriander Leaves, chopped for garnish
  • Jalapeno slices for garnish
  • Avocado, sliced for garnish
  • Lime wedges for garnish

Instructions
 

  • Heat the oil in Dutch oven or large pot over medium heat.
  • Add garlic, onion, bell peppers, and carrots. Cover and cook. Stirring occasionally until the vegetables are soft, about 5-7 minutes.
  • Add the roasted cumin powder, stir for about 1 minute.
  • Stir in crushed tomatoes(or salsa), vegetable stock, chipotle chili, adobo sauce, oregano, chili seasoning, salt and cayenne pepper.
  • Simmer, partially covered, stirring from time to time, for 10-15 minutes.
  • Stir in beans and cook, partially covered for 20 minutes longer.
  • Adjust salt and other seasonings to your taste. Add freshly ground black pepper.
  • Garnish with a dollop of sour cream, cheddar cheese, scallions, chopped coriander leaves, jalapeno slices, avocado slices and squeeze of lime.
