S’mores Cookie Bars
Summer is in the air! So as the Barbecue season! We talk about barbecue so we gotta talk about S’mores. I am sure you have had S’mores before but you may not have these S’mores cookie bars! They are absolutely delicious!
These S’mores cookie bars are perfect for summer BBQ parties, picnics or get together. Just make it in a sheet pan, cut it in big pieces and enjoy. It’s great as summer treat for kids and adults.
These bars have all the elements of S’mores: Graham crackers, marshmallows, and Hershey’s milk chocolates. Each and every bite will take you somewhere else while you indulge!
S’mores cookie bars are enjoyed best at room temperature or you can slightly warm it up in the microwave for few seconds. Hershey’s semi-sweet milk chocolates work best in the s’mores.
These cookie bars are so soft. It has melt in a mouth, ooey gooey texture! So if you don’t want to go camping or don’t have a means to do s’mores over the fire pit but still want to enjoy the s’mores, get cracking with the following recipe.
How to make S’mores Cookie Bars
Make the Graham Cracker Crust. Crush the graham crackers in a food processor or in a big ziploc bag. Mix with a little sugar and melted butter to make a crust. Press graham cracker mix into a 9×13 inch baking dish and bake for 7 minutes at 350 degrees in preheated oven.
Make Chocolate Chip Cookie dough with marshmallows. Combine butter and sugars in a large mixing bowl and beat until light and fluffy. Add eggs and vanilla extract and beat again. Mix in flour, baking soda, and salt just until combined. Stir in chocolate chips and marshmallows.
Cookie Dough layer: Press the cookie dough on top of the graham cracker crust. Bake for 18 minutes at 350 degrees F.
Top Layer: Top the partially baked bars with remaining marshmallows and Hershey’s milk chocolate bar pieces. Finish baking for another 10 minutes or until golden brown on top. Don’t overcook. The center should be mostly set but little gooey. Trust me that’s how you would wanna eat.
Wait, The most difficult part. Remove from the oven and allow to cool completely at room temperature before cutting. The S’mores Cookie Bars smell amazing. Waiting is really difficult but gotta do it.

Graham Cracker Crust
- 2¼ cup graham crackers (crushed)
- â…” cup butter (melted)
- â…“ cup granulated sugar
Cookie Top
- 1 cup butter (softened)
- ¾ cup granulated sugar
- ¾ cup brown sugar
- 2 eggs
- 1 tsp vanilla extract
- 2¼ cups all purpose flour
- 1 tsp salt
- 1 tsp baking soda
- 3 cups miniature marshmallows (divided)
- 1 cup semi-sweet chocolate chips
- 3 Hershey milk chocolate bars (broken up)
Preheat the oven to 350° F. Line the 9×13 inch baking dish with aluminum foil or parchment paper. Leave enough overhang on both sides. So that its easy to remove bars when they have cooled. Set aside.
Crush the graham crackers in a food processor or in a big ziploc bag. In a medium bowl, mix Graham cracker crumbs with sugar and melted butter to make a crust. Press graham cracker mixture into the lined baking dish and bake for 7 minutes. Remove from oven and let it cool.
In a large bowl using handheld or stand mixer fitted with a paddle attachment, cream the butter, granulated sugar and brown sugar together on medium to high speed. Beat for about 2 minutes until smooth and combined. Add vanilla extract and eggs. Scrape the sides of the bowl down as needed. Beat well until light and creamy. Stir in flour, salt and baking soda just until combined. Then mix in the chocolate chips and 2 cups of the marshmallows by hand.
Spread the cookie dough over the graham cracker crust by dropping spoonfuls of batter evenly around the dish. Gently press it together. Make sure not to disturb the graham cracker crust beneath.
Bake for about 18 minutes at 350° F. Then remove from the oven, top with remaining 1 cup marshmallows and pieces of Hershey milk chocolate bars. Return to oven to finish baking. Bake about 10 minutes more, until golden brown on top. The center should be mostly set but little gooey. Trust me that's how you would wanna eat.
Remove from oven and allow to cool completely. Cut into bar size. Enjoy!
Notes
Sprinkle handful chocolate chips on the bars as soon as you remove from the oven. Let it melt slightly. The Bars don't need these extra chocolate chips but by doing so, it makes extra gooey. I highly recommend it.
