Bailey’s coffee ice cream is an amazing and most delicious fusion of coffee ice cream and Baileys Original Irish Cream! It’s a rich, creamy, heavenly decadent, and boozy dessert! 

What’s Baileys?

Baileys Irish Cream is an Irish whiskey and cream-based liqueur with an alcohol content of 17% by volume. When I first had it, I was caught up by surprise. I did not expect that liqueur could be sweet, smooth, and velvety. The sugar and cream in Baileys mask the strong alcohol taste in it. Thus it makes it easier and smoother to drink and/or enjoy.

Have you ever put Baileys in your coffee? It’s freaking delicious. Baileys is like chocolate milk for adults or maybe even better! That’s my safe drink when I’m out and can’t have good mixed drinks like my hubby fixes up for me. He makes some amazing drinks! Coming back to Baileys…

Baileys comes with a variety of flavors from original, pumpkin spice, strawberries and cream, salted caramel, espresso crème, and chocolate cherry. I personally like Original Irish Cream for its versatility and sweetness.

I love Baileys Irish cream. I was thinking of taking it up a notch! I was going to make coffee ice cream and thought why not add some Baileys in it!! I also threw some chocolate chips in it. Trust me this Bailey’s coffee ice cream with chocolate chips is simply amazing! You get to taste coffee ice cream and Baileys in the same spoon.

Ice cream Machine

I use Cuisinart ice cream maker(not sponsored) to make the ice cream. It takes only a few ingredients and about 30 minutes or so in the machine and the most delicious ice cream is ready to be enjoyed. I really like using this machine since it does all of the mixings and churning for me and makes the whole process a lot easier!

Ice cream Base

I have tried several recipes including custard-style ice creams. Traditionally, many ice creams begin with an egg custard. While custard-based ice cream is rich and tastes amazing, it is just not my thing. I prefer to make ice cream without eggs in it because I end up with lighter ice cream and I can eat more of it in one sitting! After several tries, I figured out the ratio of cream, milk, and sugar to make the perfect, most amazing, super delicious ice cream base.

Add Flavor to the base

Now that my base for the ice cream is all set, I add flavor to my base. This way I get the same consistent result every time I make ice cream.

Let’s go over the steps of how to make Baileys Coffee Ice Cream:

I use the Cuisinart ice cream maker to make the ice cream. Put the freezer mixing bowl in the freezer at least 24 hours before. This a very necessary step because it ensures your ice cream solidifies while it’s being churned.

In a saucepan, stir heavy cream, milk, ground coffee and salt over medium heat until it starts to simmer. remove from heat.

Strain the mixture through a fine-mesh strainer into a clean container. Let the mixture cool completely. Add vanilla extract.

Turn on the Cuisinart ice cream maker, pour the mixture into the freezer bowl. Let mix until thickened, about 20 minutes. Five minutes before mixing is complete, add Baileys and chocolate chips. Let it mix completely. At this time, ice cream will have a soft, creamy texture, similar to soft-serve ice cream. If a firmer consistency is desired, transfer the ice cream to an airtight container and place it in the freezer for about 3-4 hours or until the desired firmness.

Take out the container from the freezer a few minutes before serving so that it’s easier to scoop out. Add chocolate chips to garnish. Enjoy!

  • Cuisinart Ice Cream maker
  • 1 cup Whole Milk
  • 2 cup Heavy Cream
  • ½ cup Granulated Sugar
  • ½ cup Brown Sugar
  • ¼ tsp Salt
  • ½ tsp Vanilla Extract
  • 2 tbsp Ground Coffee
  • ½ cup Baileys Original Irish Cream
  • ½ cup Mini Chocolate chips
  1. Put the freezer bowl of ice cream maker in the freezer at least 24 hours before. This is a very necessary step.
