Fresh Fig and Toasted Walnut Ice Cream

Incredibly rich and creamy fresh fig ice cream with a little bit of crunch from the toasted walnuts is a very special treat and a perfect way to celebrate fig season!

Equipment

  • Cuisinart Ice Cream maker

Ingredients
  

  • 15 Fresh Figs Riped, chopped
  • 1 cup Granulated Sugar
  • 1 cup Whole Milk
  • 2 cup Heavy Cream
  • 1 teaspoon Pure Vanilla Extract
  • cup Toasted Walnuts Chopped, Divided
  • cup Fresh Fig for garnish chopped

Instructions
 

  • Put the freezer bowl of Ice cream maker in the freezer at least 24 hours before. This a very necessary step.
  • Toast walnuts at 300° for few minutes in pre heated oven. Take out from oven. Let it cool down. Chop them in small chunks. Keep it aside.
  • In a blender, puree inside of Fig with the milk and sugar. If you don't have the fresh figs, use dried figs. Please see notes section.
  • Add heavy cream to it in a seperate bowl. Mix well until smooth.
  • Turn on the Cuisinart ice cream maker; pour the mixture into freezer bowl. Let mix until thickened, about 20 minutes. Five minutes before mixing is complete, add chopped toasted walnuts. Let it mix completely. At this time, ice cream will have a soft, creamy texture. If a firmer consistency is desired, transfer the ice cream to an airtight container and place it in the freezer for about 3-4 hours.
  • Take out the container from the freezer a few minutes before so that it's easier to scoop out. Add chopped toasted walnut over the scooped ice cream. You can also garnish with chopped Figs(optional). Enjoy!

Notes

Use dried figs if you can not find fresh figs. Soak dried figs in warm milk for about 30 minutes or so. Then puree it and use it instead of fresh figs puree.
Use Honey roasted almonds if you don't like walnuts. Almonds and Figs are also a good combination.
